5 Delicious Meals To Cook In Your Campervan




Here at Under The Stars Campervan hire, we think campervan cooking is a really exciting part of campervan holidays! Your space and equipment will be somewhat limited in a campervan, which means you can get really creative with your meals.


Many of our guests ask us for inspiration on what to cook during a campervan holiday, so here are 5 ideas that are all delicious and simple and most of them can easily be made into meat feasts, or vegetarian and vegan dishes.


One Pot Pasta

We absolutes love this filling dish for campervan holidays, especially in the cooler times of year. One pot pasta is exactly what it says on the tin: a pasta dish all made in one pot, which saves on the pesky washing up.


You can include whatever you like in your one pot pasta, but here’s how we’d do it:


  • Cook chopped onions and garlic in the bottom of a saucepan with a drizzle of olive oil until soft

  • Slice a red pepper and mushrooms and add them to the saucepan, cooking gentle for 10 minutes

  • Add a box of passata or tin of chopped tomatoes and a vegetable stock cube mixed with boiling water, stir well and simmer for 2 minutes

  • Add whatever type of pasta you like and cook until soft

  • Serve by itself or with cheese, chili flakes and rocket leaves

If you want to make this a meat dish, we recommend chicken (but cook the chicken while you’re cooking the vegetables).



Lentil Dal


Super healthy lentil dal will really warm your cockles.


  • Wash your red lentils and cover them with salted water in a saucepan, add water as you go along if needed (the aim here is to get a thick, soupy consistency)

  • Chop an onion and 4 garlic cloves and cook them in a frying pan with a drizzle of olive oil until soft

  • When the onions and garlic are soft, add garam masala, chili flakes and turmeric into the pan and stir over a low heat

  • Once the lentils


have reached a thick, soupy consistency, add the garlic and onions to the saucepan, stir well and cook on a low heat for 10 minutes

  • Serve with rice, naan bread, crusty bread or poppadoms

Yasai Itame


Feeling a bit more adventurous? Yasai Itame - a Wagamama classic - is a great dish for something a little mo


re fancy. You can choose to use tofu or chicken.


  • Cook your tofu or chicken in a frying pan with a small amount of olive oil, set it aside once cooked

  • In a saucepan, heat up two big dollops of thai green curry paste and a drizzle of olive oil for 2 minutes, add a tin of coconut milk, some boiling water, and a vegetable stock cube and stir well, simmering on a low heat

  • Add chopped garlic, chopped red chilli pepper and a stick of lemon grass

  • In a frying pan, stir fry mange tout, red onion, bean sprouts, a red pepper, garlic and mushrooms, once cooked, add the chicken/tofu

  • Add the vegetable


s and chicken/tofu into the broth mixture and serve over udon noodles

Chocolate Banana Boats


This is a much loved campervan holiday dessert for campervanners far and wide!


  • Slice a ripe banana lengthways, leaving the skin on

  • Scoop out some of the banana and fill it banana with treats of your choice (we recommend chocolate drops/spread, marshmallows and peanut butter)

  • Wrap the filled ba


nana in foil tightly and cook on a BBQ for 15 minutes, turning it as you go

Chilli


Another classic and tasty dish, chilli is a winning meal for campervan trips.


  • Brown your minced beef or Quorn mince in a pan with some oil, stirring well

  • Season with salt and pepper

  • Add a beef or vegetable stock cube and a splash of water, stir well

  • Add a box of passata or tin of chopped tomatoes and stir, cooking on a low/medium heat

  • In a frying pan, cook a chopped onion, chopped garlic, a sliced red pepper and sliced mushrooms, once cooked, add chilli powder to taste and stir well

  • Add the vegetable mixture into the saucepan with the beef/Quorn mince mixture


Empty a tin of kidney beans into a sive and rinse, add them to the saucepan and cook on a low heat for 15 minutes, stirring occasionally

  • Serve with rice and cheese
